My regular weeknight dinner is usually some form of a power bowl (which I have discussed my love for previously!) or a stir-fry/saute using whatever vegetables I have on hand. The great thing about a stir-fry, and why they are so perfect for an easy weeknight dinner, is that they are quick to make, don’t require too much skill, and are usually pretty healthy. I don’t have any patience for the oven when I’m tired or hungry. I’ll often take the lazy route and make up some vegetable medley with pesto and organic sprouted tofu, but there are endless delicious stir-fry recipes you can experiment with throughout the week to keep things interesting.
