Big Game Appetizers

I’m getting very excited for the Big Game over here. So much so, that I have about 8 TV segments planned so I can party in every city!

Last year, I wrote a post for some Big Game Appetizers over at Yahoo Shine.

No matter who you’re rooting for to win this year’s Big Game, we rounded up five of the best Big Game appetizers that will make you a winner in everyone’s book. They’re simple to make, but are a huge hit at any party. Be sure to make extra, these apps will be done before halftime!

Kate’s Buffalo Chicken Dip

Courtesy of my good friend Kate McNamee, this appetizer will be sure to please any crowd. It’s delicious, hearty and you want to make sure you make two batches because it’ll be gone before you know it. Serve with some toasted bread, chips or with veggies.

What you’ll need:

1/2 cup of cooked chicken, shredded – (you can also used canned but I like to cook my own)
2 (8 oz) packages cream cheese, softened
1 cup Blue Cheese or Ranch dressing
3/4 cup red hot sauce
1 1/2 cups shredded cheddar cheese
Heat chicken and hot sauce in a pan then add cream cheese, dressing and half of the cheddar cheese until blended. Transfer into baking dish and top with the remaining cheese. Cook at 350 degrees for 15-20 minutes or until the cheese is melted on top!

Puff Pastry Turkey Roll

What you’ll need:

1 lb. deli sliced turkey
1 sheet of puff pastry
1 cup mayo
1 cup ketchup
1 egg, whites only for egg wash
Roll out puff pastry. Spread an even layer of mayo and ketchup, should look like Russian dressing. Start layering the turkey, and fold the puff pastry over into a long roll. Tuck and seal the sides so the sauce doesn’t drip out. Brush egg wash on top. Bake on 350 degrees 35-45 minutes. Cut into slices and serve. Delicious hot or cold.

Shoepeg Corn Dip

What you’ll need:

1 12 oz. Can of white corn, drained
4 oz. Sharp Cheddar Cheese, Grated
1/4 cup of Parmesan Cheese
1 cup Sour Cream
1/2 cup mayonnaise
1-2 tbl. grated onion
Mix all the ingredients together in a big bowl and blend together. Serve with pita chips or veggies.

Spinach Dip

Courtesy of the back of the Lipton Box. It’s too good not to add to any party, and its very simple to make. Serve in a bread bowl with cut up Italian bread.

· 1 envelope Lipton® Recipe Secrets® Vegetable Soup Mix
· 1 container (8 oz.) sour cream or 0% fat Greek yogurt
· 1 cup Mayonnaise
· 1 package (10 oz.) frozen chopped spinach, cooked, cooled and squeezed dry
· 1 can (8 oz.) water chestnuts, drained and chopped (optional)
Combine all ingredients together. Chill 2 hours.
