Several years ago, I trained for a half marathon during a particularly bone chilling NYC winter. My mom told me that I was “crazy” and should quit, and I seriously wondered if I should when I realized I was the only person running along the East River one afternoon and might slip on black ice. Thankfully, I did not give up (or slip on ice!), and one of the most significant things that kept me going was regularly scheduled—at least one to two times a week—red Thai curry with tofu after long freezing-cold runs. The curry warmed up my cold body, and I’d like to think it literally replenished my muscles and soul to keep going. Even if you’re not training for a race, you should still enjoy the magic of curry this winter, and it’s not as challenging as it seems to make at home!
