Home-Made Cracker Jack!

Recipe adapted from: TopSecretRecipes.com 

What you need:

  • 1 Bag of Microwave Popcorn
  • 1 cup of peanuts
  • 1/2 stick of unsalted butter
  • 1 cup of light brown sugar
  • 2 Tablespoons of Molasses
  • 1/2 cup of light corn syrup
  • pinch of kosher salt

How to make it:

  1. Pre-heat oven to 250 degrees
  2. Combine popcorn and peanuts and lay on a parchment lined cookie sheet, remove any nonpopped kernels
  3. In a saucepan, combine the butter, sugar, molasses, light corn syrup and salt
  4. Bring the mixture to 260 degrees (on a candy thermometer), so its thick but not overly done. (about 20 min)
  5. Take popcorn and peanuts out of the oven and pour the caramel mixture on top and mix together so each kernel is covered with the caramel goodness.
  6. bake for 10-15 minutes, tossing every 5 minutes to make sure you get the kernels coated

Home made Pretzels:

What you’ll need:

  • Store bought pizza dough
  • 1/4 cup baking soda
  • water
  • coarse salt
  • egg

How to make:

  1. Pre-Heat oven to 400 degrees
  2. Boil 7 cups of water and 1/4 cup of baking soda
  3. Lay out the pizza dough and cut into 5 rectangles
  4. start rolling each rectangle so it looks like a thin breadstick
  5. take both ends to the middle, twist once and flip over
  6. Place each pretzel into the “bath” of boiling water for 30 seconds, and place on a paper towel
  7. Whisk together an egg and a tsp of water.
  8. place pretzel on a parchment lined cookie sheet and brush with egg wash and salt
  9. Note: you might need to reshape pretzel before baking
  10. Bake at 400 degrees for 12-15 min

Home made corn dogs:

Recipe adapted from: Martha Stewart

What you’ll need:

  • Beef hot dogs
  • 2 2/3 cup corn meal
  • 1 1/3 cup flour (some extra for hordogs)
  • 1/2 cup of sugar
  • 2 tsp baking powder
  • 4 eggs
  • 1 1/2 cups of whole milk or buttermilk
  • salt and pepper to taste
  • vegetable oil
  • bamboo skewers

How to make:

  1. Mix the wet ingredients into the dry ingredients
  2. Pour mixture into a tall glass or mason jar
  3. Prep hotdogs by drying them with a paper towel and dredging in flour
  4. Add skewer to each hot dog
  5. dip skewered hot dog into batter, shaking off any excess
  6. Bring oil to 360 degrees and fry corndogs until you get your desired color.
